Granny Carolyn Made the Best Poppy Seed Chicken Casserole

One of my favorite Christmas recipes is the poppy seed chicken casserole that my Granny Carolyn always made. She is the only person I ever seen make it and it was delicious. She passed away a few years ago so I have tried to make it from the ingredients I remembered seeing her use as a child. I found out a few years later, that I had added cream cheese when I should have added sour cream. Either, way, both are delicious. I will share both recipes for those of you who want to try them.


If you have never had the poppy seed chicken casserole, you should give it a try! Imagine juicy chicken, covered in cream of chicken soup with a crispy, buttery, Ritz cracker crust for just the right crunch. It’s almost like having a casserole of your favorite chicken soup, with crackers included.

Granny Carolyn’s Poppy Seed Chicken Casserole

2- lbs of cooked chicken, deboned and shredded

1- can condensed cream of chicken soup

2- sleeves Ritz crackers, crushed

1- 8 oz. tub of sour cream

2-3 tbsp poppy seeds

4 tbsp. melted margarine

1. Preheat oven to 300 degrees.

2. Mix shredded chicken, poppy seeds, soup, and sour cream, in a large mixing bowl until well combined.

3. Spread ingredients evenly in a large baking dish. I usually use my 9 x 13 glass, Pyrex dish.

4. In another bowl, add the crushed Ritz crackers and drizzle the melted butter over the crackers. Mix well so that crackers are moist but not soggy. If needed, add more. After it’s mixed well, cover the chicken with the crackers to make an even crust on top.

5. Back for 20-30 minutes until nice and hot. You will know it’s done when the chicken starts to bubble and the crackers are nice and crispy again. Don’t burn the crackers!

My Accidental Poppy Seed Chicken Casserole…

My accidental recipe was exactly the same except I used 8 oz. of cream cheese instead of sour cream. What can I say? I was young when I watched her make it. I had always assumed it was cream cheese, why I don’t know, because they do not taste the same. This version makes a thicker casserole with a nice twang of cream cheese, while Granny’s version has a rich and creamy chicken taste. Both ways are delicious!

  1. Hi Jessica, It makes a 9 x 13 casserole pan so it feeds alot! I would say 10+ people depending on how much they eat...
